3 ideal recipes for autumn, and with seasonal ingredients!

The autumn it is a station that is characterised by having a most bonkers time. Whether it's cold, temperatures are rising or rainy days are arriving. Hence, depending on the temperature, there are times when we fancy eating a cream or a nice hot broth and others that we prefer toughened plates or cooler.

However, it is also a station with large quantity of seasonal food which offer us plenty of scope to prepare a whole host of dishes depending on what we fancy – whether it’s something hot, warm or cold. Among the most typical autumn foods, we can highlight the chestnuts, the apples, the pumpkin and the mushrooms or fungi that proliferate during rainy days.

From the Organic Tapas Bar we want to share with you some ideas of recipes that you can prepare with these ingredients to make the most of their seasonal availability and, whilst you’re at it, treat yourselves to some dishes that are both delicious and healthy. After all, enjoying tasty food isn’t at odds with looking after your health if you use high-quality, organic ingredients.

PUMPKIN AND CURRY SOUP

On cold or rainy days you always fancy a good warm soup to cheer us up and keep us cosy. However, always making the same soups can cause us to fall into a rut and find them unappealing anymore.

That’s why, even though autumn is the season for many vegetables, such as spinach and courgettes, here at Astrid Tapas we recommend trying something new with a delicious cream of pumpkin and curry soup. A much more unconventional recipe than courgette or spinach soup, which is also prepared in a flash and has lots of vitamins and minerals.

Advice: if you also add a touch of nutmeg you will manage to give it an even more special flavour.

WARM MUSHROOM AND GOAT'S CHEESE SALAD

As we mentioned, autumn and its rainy days are the perfect season for mushrooms. These foods can be prepared in countless ways, from creamy soups to stir-fries, scrambled dishes or tempura. But from our organic restaurant in Malaga We want to go a step further and suggest a warm salad for those days when you don't fancy a hot dish, but neither do you want the typical mixed or spring salad.

To prepare it you will only have to boil some eggs, wash well the lettuce (you can use a mix or choose the variety you like best) and the mushrooms. Afterwards, we make the arrows flash-fried on the griddle, we cut a few slices of cheese goat's and we also give them a quick flash of heat in the frying pan to get that warm touch for the salad.

Finally, you just need to put all the ingredients in a dish and add the dressing you like best. We recommend a dressing based on balsamic vinegar from Modena, olive oil extra virgin, honey and a pinch of salt.

Advice: if you sprinkle a few over the top nuts It will suit him down to the ground.

Sweet chestnut purée

And as it couldn't possibly be any other way, we finish with a sweet bite, a chestnut cream that can be eaten either in breakfast as in the snack or of dessert. Its preparation is extremely simple as it is made by following the same procedure as jam. The only step that is more complex and takes more time is peeling the chestnuts (you have to remove both the shell and the skin).
