Ingredients:

For the preferment:

  • 50 ml of milk
  • 65g wholemeal flour
  • 10g fresh yeast

For the pastry:

  • 100 g wholemeal flour
  • 125 g whole oat flour
  • 25 g ground almonds
  • 15g of fresh yeast
  • 1 egg
  • 50 ml skimmed milk
  • Extra virgin olive oil
  • Grated zest of half an orange
  • A pinch of salt

Preparation:

For the pre-ferment we dissolve the yeast in the milk and add the flour, mixing everything evenly. This will be placed in a bowl filled with water and will let it rest until it begins to float.

Now will be the time to knead y add the dough ingredients, the 100g of flour and the 125g of wholemeal flour along with the ground almonds. To help the dough take shape and lose its dryness, the egg, oil, warm milk, orange zest and a pinch of salt are then added.

Can you use an electric hand mixer so that the ingredients are homogeneous and the more elastic and kneaded dough.

Below, we grease a bowl with a little extra virgin olive oil and leave it rest until it proves. Once our dough has risen enough, we begin kneading it with the help of a little flour to stop it from sticking too much to our hands.

When the dough gets a bit firmer we will open a small hole in the middle to try to give it a shape as similar as possible to that of the traditional doughnut and then it will be very carefully transferred to a oven tray lined with greaseproof paper.

Before putting the king cake into the oven we can place a glass in the centre to help us keep the ring shape for the two hours it rests to double in size.

Once this time has passed decorate the ring cake with nuts and a bit of egg yolk glaze to add shine. You can also use other ingredients for the decoration.

Put the roscón in the oven at 200 degrees for 5 minutes and then reduce the temperature to 180 degrees and leave it for about another 15 minutes. You can use a pan of water to create steam in the oven and help the king's cake to prove properly.

After this time, leave it to rest and … Done! You will have a healthy roscón to celebrate the Epiphany just the way we like it, consuming healthy food.
