Stuffed squash with quinoa

Firstly, it should be mentioned that the main product of the dish, the pumpkin, can vary. That is to say, there are various types of squash that can be used for its preparation, highlighting the acorn squash, butternut squash or pumpkin.

The quinoa meanwhile is a seed, stands out for its high fibre, protein and various nutrient content. It is a great option as organic grain substitute traditional ones, also giving texture to the mixture.

Preparation:

  1. Pumpkin Court: The squash should be cut in half, the seeds removed, and then roasted until tender.
  2. Preparation of the Quinoa: rinse the quinoa with cold water to remove a natural layer called saponin, which can give it a bitter taste. Afterwards, cook the quinoa until it has a mild taste.
  3. Filling: In another frying pan, sauté the filling; you can use mushrooms, garlic or onion as a base and use other products that you find in your kitchen.
  4. Mounting: Finally, we will fill half of the squash with the quinoa and the filling and put it all in the oven until the mixture reaches the desired consistency. The time depends on the type of oven and the size of the squash; the squash itself will tell you the ideal moment to take it out. Each half of the squash is filled with the quinoa mixture and baked until everything is piping hot and the flavours have melded.

Chocolate and almond truffles

Chocolate and almond truffles is a delicious dessert that draws its inspiration from texture and taste of dark chocolate and the delicious flavour of the truuffles and almonds. Furthermore, its preparation in the kitchen is very simple.

Ingredients:

  • Dark Chocolate It is ideal to use dark chocolate, with at least 70% cocoa to get a deep and intense flavour.
  • Almondsthey will serve to add a crunchy touch to the dish.
  • Honey, bringing the characteristic sweetness of honey.
  • Vanilla extractwill allow us to enhance the flavour of the chocolate.
  • Cocoa powder: ideal for coating the truffle and giving it that special touch.

Preparation:

First of all melt the chocolate using a double boiler, this will allow us to combine the ground almonds, honey and vanilla extract with the chocolate. It should end up dough with a certain consistency, at least firm enough to roll it into balls.

The dough will be left cool for at least 1 hour, this will make handling it much easier and will allow us making balls with it. Once the truffles are made, a layer of cocoa powder should be applied to give them an extra flavour.
